Just Us Girls - Mommy and Lucy Special Breakfast

It's just us girls this morning.  Daddy is at the farm.  Bubba is at Poppi and Grammy's.  So it's just Mommy and Little Sister Lu.
I came across this yummy looking recipe the other day and decided to give it a try this morning for something special for just us girls.  Double coconut blueberry muffins.  Mmmm.
And guess what - they are as good as they look.  I whipped them up gluten-free, of course.  Instead of white flour, I used 1 3/4 cup of Bob's Red Mill All Purpose Baking Flour and 1/2 teaspoon of xanthum gum.  I also added a little extra coconut oil.  And used coconut milk infused with vanilla.  The texture is dreamy.  The taste is amazing.  They really are as buttery as she says in her blog.  You may not believe that something without butter could taste buttery - but these do!!!
Peaches, watermelon, and shots of super greens rounded out breakfast - which we ate to some Okee Dokee Brothers tunes.  I highly recommend "Lucy and Tighty" (it actually made me miss Alex even more!) from the "Take it Outside" album and "Along for the Ride" from the "Can You Canoe" album.
We also got surprised as one of our butterflies hatched while we were eating, too!! :) 
It's going to be a good day.
